MINCED MEAT WITH RICE: 5 TIPS NOT TO MISS

1. RICE WITH MINCED MEAT IN THE OVEN

The first of the recipes of minced meat with rice is from the blog Food From Portugal.

– Ingredients –

  • 150g of minced beef
  • 150g of pork
  • Nutmeg q. b.
  • 300g rice
  • 3 cloves of garlic
  • 100 ml olive oil
  • 2 medium size onions
  • Pepper q. b.
  • 3 medium tomatoes, ripe,
  • 1 egg yolk
  • Salt q. b.

– Mode of preparation –

  1. Start by seasoning the meat with salt, chopped garlic, nutmeg and pepper. Mix all the spices into the meat and set aside.
  2. Then, heat a pan with half the olive oil, the chopped onion, the tomatoes peeled and cut into small pieces and let it cook in simmer until the tomatoes begin to stay undone.
  3. Then, add the meat, stir and let cook for about 20 minutes, stirring occasionally.
  4. In the meantime, place the remaining olive oil and the other chopped onion in a pan and saute in low heat until the onion begins to brown.
  5. Add the rice and season with a little salt. Stir and let fry for about a minute.
  6. Add water (twice the volume of the rice) and bring to the boil over medium-high heat. When they start to boil, reduce to simmer and leave to cook for about ten minutes.
  7. In a tray put a layer of rice, then a layer of meat and finally another layer of rice. Brush with egg yolk and bake in the oven, pre-heated to 180º C, for about 20 to 25 minutes until golden brown.

2. RICE LOOSE MINCED MEAT

  • 400g of minced beef
  • 1 measure of rice carolino
  • 3 tomatoes, peeled
  • 1 onion
  • 2 cloves of garlic
  • Olive oil q. b.
  • 1 c. tablespoon chopped parsley
  • Oregano, white pepper and white wine q. b.
  • ½ Beef broth

– Mode of preparation –

  1. Heat a pan with the olive oil and fry the meat until it is golden brown and loose.
  2. Then, cool off with a little white wine and add the onion and minced garlic and cook until onion is soft.
  3. Add the tomato finely chopped and let it cook a few minutes.
  4. Season with chopped parsley, the oregano and the beef stock.
  5. Then add the rice and the water to the boil and, if necessary, rectify of salt. Cover and let boil. Then reduce the heat and let it cook for about 15 minutes. You can accompany with a salad.

3. PIE OF RICE WITH MEAT AND CHORIZO

For the meat:

  • 800g of minced beef
  • Olive oil, salt and q. b.
  • 1 large onion
  • 3 cloves of garlic
  • 1 bay leaf
  • Pepper paste, syrup of tomato and garlic seasoning and jindungo q. b.
  • 1 dl of white wine
  • 2 eggs
  • Cheese mozzarella Slices of chorizo to garnish q. b.

For the rice:

  • 1 onion
  • 1 bay leaf
  • Olive oil q. b.
  • 2 cloves of garlic
  • 700g of rice aromatic
  • Water q. b.

– Mode of preparation –

  1. Start by preparing the meat. Heat a pan with the olive oil, the onion, the garlic picadinhos, and the leaf of laurel and let it cook a little on medium heat, without letting it burn.
  2. Then, add the pepper paste and stir.
  3. Add the meat and stir well.
  4. Then add the tomato sauce, the spices, the white wine and stir well. Cover, reduce the heat and let it cook until the meat is ready. If necessary grind the spices.
  5. While the meat is cooking, prepare the rice. Make a stew with the olive oil, the onion and the minced garlic.
  6. When the onion is soft add the water, add the rice and let boil. When the rice is almost cooked remove from the heat.
  7. Then, on a tray, arrange a layer of rice, then a layer of meat and another of rice.
  8. Bata os ovos pincele o arroz. Polvilhe com queijo mozzarella e finalize com as rodelas de chouriço.

4. CHILLI COM CARNE

  • 500g of red beans
  • 400g of tomato concassé
  • 500g of beef mince
  • 1 chorizo of black pork
  • 2 malaguetas red

  • 4 cloves of garlic
  • 2 c. tablespoon of tomato purée
  • 1 c. tea cumin
  • 1 c. tea paprika
  • 1 bay leaf
  • Olive oil, salt and pepper q. b.

– Mode of preparation –

  1. This chilli “à la Chef” makes it so. In a pan, saute the onion and garlic, chopped finely, with a drizzle of olive oil.
  2. Then, add a teaspoon of stalks of chopped coriander, the chilli (to taste) also chopped, and the chorizo cut into small pieces. If necessary, add a little more olive oil and a bay leaf.
  3. Add the cumin and paprika and stir well.
  4. Then add the minced meat and cook well in a stew.
  5. When the meat is more loose, add the pulp of tomato paste and incorporate.

  • 85g of tomato paste
  • 60 ml of water
  • 115g cheese Mozzarella grated
  • 2 eggs (to beat)
  • 60g grated parmesan cheese
  • 110g breadcrumbs
  • 2 eggs, beaten
  • 325 g of bread crumbs
  • 960 ml of oil for frying (or more if needed)
  • Salt and pepper q. b.
  • 400g of tomato sauce

– Mode of preparation –

  1. Take the rice on the stove in water. When boiling, reduce the heat and let it cook for about 20 minutes or until soft. After you let it cool completely.
  2. In a skillet, saute the onion and garlic and then fry the meat until it is golden brown (on medium heat/high).
  3. Then remove from the heat, let it cool and add the cheese Mozzarella.
  4. In a bowl, mix the eggs, the parmesan cheese, the salt, the pepper and the bread crumbs. Add the rice and mix well.
  5. Place a portion of the mixture of rice into your hand (about two tablespoons and a half of soup), to form a hole in the center and place a spoonful of meat mixture with cheese.
  6. Mold the rice to make a ball, dip in beaten egg, and pass it in the breadcrumbs until well covered. Repeat the process until you run out of the meat and the rice.
  7. Then heat the oil in a frying pan over a medium heat and fry the rice balls for about three minutes, until golden brown on all sides. Remove with a slotted spoon and place on absorbent paper.
  8. Accompany with tomato sauce.
